“Everyone Knows Someone Who Needs This Information!” (TM)

I am trying to catch-up, as lots of things have been happening in my life and I want you well-equipped with information and healthy foods as we transition seasons and head for Holiday Times.

As Food is Your Medicine, it’s important to get the Best! The Environmental Working Group lists the Best and Worst Farmed foods. Here they are for 2011, with my comments.

The new “Dirty Dozen”: Avoid these if conventionally-farmed, at all costs, and for the nutritious foods which you don’t want to miss, then use only the ORGANIC farmed versions.

1. Apples – these fruits are highly nutritious, but they should only be used as a whole, raw, organic fruit. Making them into juice concentrates too much of the large fructose content, and cooking changes the fruit completely (apart from the fact, then when cooked, most people remove the skins). It is only just beneath the skin that the most-healthy nutrient in apples hides. It’s the mineral chromium, which is needed for blood sugar control. If one was eating a totally-natural hunter-gatherer diet, then probably “one apple a day would keep the medicine-wo/man away”. Apple sauce is prolematical being cooked and in the huge portion (meaning equivalence of several apples) which people are likely to give themselves or their children (even worse). Make sure to wait for this year’s Fall Harvest of apples. Those stored in the supermarkets’ coolers are long-since useless.

2. Celery: It’s a sneaky addition to the Bad List. I have a huge celery plant in my back-yard and I see NO reason for it to be pesticided like conventional commercial agriculture does. Celery is the second-ranked dirty food. It’s critical to use organic celery (and only CRISP stalks), as celery helps our bodies relax from tensions and stresses (it’s called a nervine). If the celery goes limp, do NOT use it. Celery should be used raw in salads and the “strings” provide good fiber to slow down other carbs.

3. Strawberries Every kid loves strawberries, so it’s shameful that conventional ones are the 3rd. most dangerous fruit thanks to farming in America. Your country may be different, so check it out!  This berry has lots of anti-oxidants and vitamins, so do buy it, just buy Organic! Figure that unless you buy Organic products, that strawberry ice-cream and strawberry jam will have filthy conventional berries in them. Stupid manufacturers.

4. Peaches: These fruits belong to the same botanical family as apples and plums. They are nutritious but also have a lot of fructose, so should be used sparingly. Fructose is not good for diabetics and everyone is affected by fructose turning-off your satiety signals and piling on belly-fat. Generally, vegetables are MUCH healthier than fruits and fruits should be used in extreme moderation.

5. Spinach: It’s not just the event a few years ago where birds or roaming animals pooping on spinach was not washed-off well enough, causing an E. coli outbreak. That can happen to any raw food. It is your responsibilty as the consumer to make sure that “Triple-washed” spinach (or any thing else) is washed again in your own kitchen. Some leafy greens are harder than others to “wash” commercially. You are the final inspector. Spinach is nutritious enough to bother with this, but as it also has a hefty-dose of oxalic acid, it is not a main-line green. Just add a few extra leaves to your salad made from other greens (like romaine, cilantro, parsley and kale — all of them Organic).

6. Nectarines: Nectarines are a hybrid – a cross between peaches and plums, They have the best-of-both. But, unfortunately, in America, they are pesticided and chemically-fertilized too much. So, buy Organic nectarines, only in season, and get the benefits of a lower fructose fruit (as plums are lower in fructose) with a hint of the higher Peach.

7. Grapes:Don’t get dragged-in to the out-of-season grapes! Most are being farmed in countries which do not have strong laws regarding pesticides! Apart from that, it’s always wiser to eat-in-season. Your body needs different foods in different seasons and expects them to have their nutrients, in the right proportion and form, to carry you through. This is especially true of winter foods, which are denser, with their own array of nutrients. Whereas warm-season foods have much higher water-content to help slake your thirst (and a nutrient profile rich in electrolytes to help compensate for mineral loss when sweating). Just make sure you eat in season. Research the proper season when foods will normally be harvested in your country and region. Organic grapes (especially red ones) are a highly-nutritious food which should be used once every few days, in season, in moderate quantities, as there’s lots of fructose in them, too.

8. Sweet bell peppers: Peppers (hot or sweet), potatoes, tomatoes, tomatillos and cape gooseberry are all part of the nightshade botanical family.  Sweet potatoes are from a different family. Nightshades can cause inflammation and a biochemical cascade resulting in arthritis for some people. They are foods to get off of for up to 6 months and see if you are doing better. If you still want to re-introduce them, do it one by one, at least a week in between each and pay attention to your body’s signals. Make sure any of these foods is always Organic! Peppers have lots of Vitamin C and the red ones have Vitamin A, too. But, you must make sure that any of these foods are not secretly undermining your precious Health.

9. Potatoes: Same as for Peppers, above, along with the fact that potatoes must always be Organic, scrubbed, unpeeled, in small portions (like 1 small to medium potato) and eaten always with a healthy fat in the meal (avocado, organic coconut oil, organic hemp oil, organic olive oil, organic butter, organic ghee).  On their own, potatoes have a very high glycemic index and trigger too much insulin; healthy fats slow them down. Conventional potatoes are also doused in fungicides after harvest, and I am not sure that even peeling them helps you avoid the chemical. And, the most important nutrition is just under the skin, so you would be just getting a big carb load without much nutrition to be peeling them.

10. Blueberries: They are a divine gift — easy to grow, delicious, and most importantly they are highly nutritious, but NOT if conventionally farmed! Only get Organic berries or grow your own, Organically. The plants require very little attention. Eat them raw. You want to get every iota of goodness and cooking always destroys nutrients. Use them in fruit salad, smoothies etc. They are a medium-range fructose fruit.

11. Lettuce:  I suspect that this Warning applies to all commercially-grown conventional lettuce. However, when you buy Organic lettuce, you not only have a safer product, but you will have access to a much-wider choice of green leafies — lettuces and all sorts of other plants — like those in “Spring Mix” etc.  Organic Romaine lettuce is MUCH more nutritionally-sound than any iceberg lettuce (which is a total waste of your hard-earned dollar, as iceberg has almost NO nutrients, at all). Enjoy trying oak-leaf lettuce, frisee, endives, orach, radicchio, and all the other wonderful “greens”.  but only in Organic or non-sprayed form. Leafies are the best source of B vitamins, used to allay stress and also they contain wonderful alkaline minerals you need for bio-electricty and to quell inflammatory chemistry.

12. Kale/collard greens: Kale is SO effective in bringing up the nutrients in the soil that, when it is used in fields which have had toxic and too many pesticides thrown on them, kale is used to “detoxify” the fields (but then those companies still sell the very-toxic, conventional kale!). So, you can only use Organic Kale, for sure! Kale is a nutritonal powerhouse, and if I could only choose one vegetable, this would be it! Those on Coumadin / Warfarin therapy can use it, but it just has to be at a consistent serving and use, so it can be accounted for.

The EWG also publishes a list of the 15 fruits and vegetables that are fine to eat when they are conventionally-grown. I’ll share that with you next time.

“Everyone Knows Someone Who Needs This Information!” (TM)

Many people will expect this series to be about normal, prescription diabetes medications, but these do not treat the root causes. So, instead, the natural foods and herbs which send accurate messages of support and positive-change are preferable for diabetics to use, along with regular meds (if you and your doctor think this is best). I have always used the natural medicines at hand: food in good ratios and choices, movement, clean air, pure water and sunlight, alieviating stress by viewing Nature and other natural methods; all these are the tools of real Health.

I have been introducing you to 10 importqant herbs which can positively impact healing your diabetes: turmeric, garlic, peppermint, parsley, rosemary, chili pepper, cinnamon, ginger, basil and lavender. Turmeric is a member of the same botanical family as ginger is. Both are ant-inflammatories, and diabetes has an inflammatory component.

Dr, Mercola lauds turmeric and it is well-respected in the ancient health system of India, Ayurveda, humanity’s first formal system of medicine. You can buy turmeric on its own, but most of you will have had it when you use curry powder; it colors it naturally, and although it does not have the wonderful flavor of ginger, it’s neutral and is really a powerful food ally and healer.

In a recent email, Dr. Mercola said:

‘What makes turmeric so sought after and even revered by those who use it? Well, not only is turmeric a popular spice, but it has also become one of the most thoroughly studied nutrients for Health. Turmeric and its active compound curcumin affect more than 700 genes and 100 different pathways inside each of your cells. (Em: this is a potent example of epigenetics at work.)

What that means for you is this  is turmeric supports a normal immune response, healthy joints and bones, optimal digestion, blood and liver functions, and so much more. Liver health is critical for diabetics, as it is in the liver that the opposing hormone, which counters insulin excess, glycogen, is made and stored.

The turmeric rhizome also acts as an adaptogen – which is a substance which modifies your stress response – bringing it “down” if you are too anxious, and raising your response if you are lethargic or out-of-energy.

Turmeric is also a phenomenal antioxidant which helps your body defend against free radicals, providing support for your eyes, skin, and and all your cells. ‘

So, start investigating ways to add either curry powder or just turmeric to your recipes. Alone, turmeric doesn’t have a hot, spicy flavor (it can be bitter if using too much)(I’d say no more than 1 Tablespoon for a large soup-pot of food, at least until you know your tolerance for its flavor).  Also know that its rich color does stain! Curry powders do come in mild to hot. You can even start to make your own mix, as most Indian home-cooks do. It’s not hard!

If you suffer from GERD (Gastric Esophogeal Reflux Disease) or if you take Warfarin or Coumadin, ask your doctor about guidelines for amounts to use. If you are on anti-depressants, realize that turmeric does affect neuro-transmitters like serotonin and noradrenalin in positive ways, so you may not need as much medication with regular turmeric use; discuss this with your physician.

If you are just using normal food amounts, rather than curcumin supplements, the spice should be safe during pregnancy and probably is fine for the conditions just mentioned, too.

Just make sure that you start incorporating this wonderful food into your life.

“Everyone Knows Someone Who Needs This Information!” (TM)

I want to revisit low thyroid, as it is a possible source of an incomplete or inaccurate diagnosis for diabetes! Yes, you read that right. Let’s learn more from Dr. Robert Rowen, MD and from Dr. David Brownstein, MD. The first article is here: Diabetes and Thyroid Connection

Dr. Rowen asks in a recent email:

Is your diabetes really hypothyroidism?

If you have hard-to-treat Type 2 diabetes, your problem might not be insulin and your pancreas, but rather, it could be your thyroid!

Research scientists know that both humans and animals exposed to cold temperatures get high blood pressure. Next, they wondered if diabetic mice exposed to cold would get the problem even faster than normal mice.

They placed diabetic and control mice in a constant 41 degrees F environment. The normal mice survived, while the diabetic mice died (in just two hours)!

The team surmised that the diabetic animals died because they couldn’t maintain their body heat — which is regulated by their thyroid gland.

In good scientific fashion, the researchers decided to take it to the next step. They wondered if giving the diabetic animals thyroid hormone might help them withstand the cold.

So, they administered thyroid hormone to the diabetic mice. Those mice increased their body temperature AND even more interestingly, they also had a significant drop in their blood sugar within two hours (and a 50% blood-sugar decrease within four hours)!

The researchers then looked at blood sugar levels at the start of the study, and in the diabetic animals, they found the level had been five times normal! They found that the thyroid levels in these animals were also low.

Diabetes affects at least 150 million people worldwide, and that’s an understatement, as many people do NOT know they are diabetic.

In Oklahoma, where this research was conducted, there are over 268,500 cases of human diabetes. Most of these people, at any age, are obese or overweight;  most can cure it with a proper diet and moderate exercise, alone.

However, Dr. Rowen says that in his practice, he has  seen a number of people resistant to a simple dietary fix. And, there is also a group of adult diabetics who are thin. Yes, you can be thin and be hypothyroid (low thyroid). You can also be heavy, with low thyroid as a contributing factor to that overweight condition — often ascribed to your “diabetes”.

If you have Type 2 diabetes, at any age, then get your doctor to check your thyroid level by blood tests, to include a “free T3, free T4 and TSH” (and Dr. Brownstein insists on these and a few more lab tests: reverse T3, antithyroglobulin and antimicrosomal antibodies … and I think and knowing your Iodine level would be useful). Do not allow your doctor to just order a TSH test (it’s notoriously inaccurate).

However, Dr. Rowen uses the tests and learns a lot because he also compares the results to his patient’s basal body temperature. What’s that?

It’s the important lab test you take yourself as Dr. Broda Barnes, MD, famous endocrinologist in the early 20th century, described.

Dr. Rowen and Dr. Brownstein both ask you to check your “under the tongue” temperature the moment you open your eyes in the morning, three days in a row (several days away from your menstrual period, for women).

You have to have a Basal Thermometer (a special one from the pharmacy — with a numbering scale that let’s you see the tiniest changes in the temperature range that you need to understand).

Shake the mercury down the night before. Have a clock where you register the time. Open your eyes and reach for the thermometer and look at the clock. Do not move, except to breathe, until the 2 or 3 minutes are up.

Your morning, without movement, “basal temperature” should be at least 97.8F. If it’s not, see your integrative physician immediately!

What’s likely needed then? A prescription for T3 (as used in this study) might help your low thyroid and diabetes all in one go. Do NOT let any physician put you on synthetic thyroid preparations! Read more on that next time.

Meanwhile, Dr. Brownstein, MD alerts us to the facts that:
“Your body is composed of 70-80% water, and your brain is closer to 85% water!”

And, thyroid problems, like all illnesses, cannot be solved without getting sufficient water in your diet.

So, here’s how to know if you’re drinking enough water:

Do you have any of these signs of dehydration?

Fatigue
Dry tongue
Coated tongue
Vertical ridges on your nails
Dry skin
Poor skin elasticity

Even if you don’t notice any of these signs, Dr. Brownstein says you could still be water-deficient. It’s extremely common, especially in those with thyroid issues, and maybe that helps to account for that famous “diabetic” thirst!

Here’s an important formula for your recommended water intake:

Take your weight (in pounds) and divide in half.
That amount (in fluid ounces) is your recommended water intake.
That number divided by 8 equals the number of 8 ounce-sized glasses of water you should drink per day.

This process probably works for metric, too, but confirm this with your physician.

I recommend getting a big water bottle and loading it up in the morning. Then, carry it with you, while sipping on it through the day. That’s what I do.

Also, Dr. Brownstein addresses tips to prevent water loss that could lead to dehydration. All liquids are not equal. Only water counts to hydrate you, the rest dehydraye your tissues, in varying degrees. He says:

___   “Don’t overload on caffeine”  . . . (I say, try not to use caffeine, except for 2 cups of green tea a day)
___   “Don’t drink a lot of soda”  . . . (I say, don’t drink any! It’s VERY pH acidic.)
___   “Take it easy on the alcoholic beverages”  . . . ( I say “Why use them?” They are Carbs and do affect your blood-sugar levels, rob you of minerals and vitamins and stress your liver.) Get the “goodness” of wine by eating red organic grapes, instead!

Dr. Brownstein and I recommend that you use a water filter that removes fluoride and chlorine as well as bacteria and parasites. Tap water and bottled water (in plastic bottles) contain chemicals potentially harmful to your thyroid.

Now, I have yet to find a water filter which states that it removes fluoride! So, as my city stupidly voted to fluoridate the water, before I arrived, I go to markets in nearby suburbs which do NOT fluoridate their water and get state-of-the-art commercially-filtered water OR I buy spring water — and decant it into a porcelain crock, immediately.

You need to do all these steps to get baseline information on your health AND to stop the slide on a slippery-slope from these various beverages. More next week.

“Everyone Knows Someone Who Needs That Information” (TM)

Trying new foods which are healthy is imperative for diabetics, as many people are stuck in a rut, continuing to eat foods and sustain habits which are not helping, and which may harm. The new foods are generally vegetarian, and in this case, they are essential. If you haven’t been eating them, you are putting yourself in jeopardy.  Some options are more expensive than others, but in the BIG food-picture, saving money on one part of your food budget (the most expensive is processed foods and more protein than you need), then enables you to buy healthier fresh or lightly-processed real foods.

We do not have to buy processed foods for the smart 2-snacks-a-day in a diabetic diet. In fact, snacks are a chance to try out other new items and recipes. When this season’s Biggest Loser Finale show this week revealed 59 year old Deni and 35 year old Olivia winning, as the at-home and grand-prize winners, respectively, there were lessons to learn there. We’ll discuss that over coming weeks, but small, healthy meals and snacks, paced through the day, is integral for beating both obesity and diabetes.

Famed holistic physician, Dr. Andrew Weil, MD says “As a physician, I recommend nutritious hemp seeds and oil to anyone interested in maintaining a healthy diet. Everyone will benefit when American farmers can grow this amazing crop once again.

What’s going on here?

Well, Hemp History Week occurred May 2-8, 2011 and you can learn more at: Grow American Hemp! – it’s Nature’s Wonder Food and the safest ecologically for food, clothes (excellent and no pesticides — cotton accounts for 25% of all pesticide use!), building materials, cosmetics, industrial products (Chrysler, Mercedes Benz, Lotus, GM and BMW already use it in cars)  and on and on.

Currently, one needs a permit to grow even industrial hemp (which cannot produce marijuana) and the American government has not been granting permits and has been waging war on those who want to grow this amazing, healthy, useful plant.

It’s even burned fields on the permit-holding, sovereign lands of several Native American tribes, for their own home-building use (they did the American government the  “courtesy” to get a permit, although they should not need it). The ATF agents burned 2 seasons of crops and left individuals and tribes without their crop after investing all their money.

No-one is getting permits in America, and meanwhile, we are importing hemp food and hemp products from Canada and other European and Asian countries which are more enlightened. So, we pay more and our farmers are locked out from one of the few lucrative crops which could help them save their family farms and provide a decent living-wage.

Hemp is one of the most nutritious foods on earth and if I had to choose 3 foods to have plenty of on a desert island, it would be one. Hemp seeds are a nearly-perfect food source. And, they are one of the few foods which have the needed human ratio of 1:3 essential fatty acids (EFAs) of Omega-3s to Omega-6s.

We must get these essential fatty acids everyday: either from cold water fish, molecularly-distilled fish oil capsules, organic hemp seed, organic chia seed or organic flax seed. Omega-3s are severely lacking in the modern diet, and this is possibly why neurological problems are increasing, as the brain is 70% these essential fats. Episodes of Parkinson’s, ADD, Autism, Alzheimers and more, along with IQ’s falling can all be attributed to lack of these EFAs. And, their lack also lets body-wide inflammation wreke havoc; this impacts diabetics directly.

So, like last week, when I wrote about chia seed recipes, I’ll add some interesting hemp seed ones this week.

I prefer NOT to cook hemp seeds, flax seeds or chia seeds. If you do, please do not use any heat higher than 325F. That’s critical. Flaxseeds must be ground to be accessible and then used immediately.

You will not be failing drug tests if you eat hemp! Only those who use drugs will register on those tests.

HEMP PANCAKES

Makes: About 16 pancakes Prep Time: 15 min Cook Time: 15 min

1 C  shelled hemp seeds (hemp hearts)
3 T nut oil or organic butter (changed)

1 C organic whole wheat flour or organic substitute of choice
2 t no-aluminum baking powder (Rumford’s)

1 t baking soda
1 t Celtic sea salt

4 egg whites – divided, free-range, vegetarian fed —– save the egg yolks (or cook, whole, to medium, separately and serve on side).
1 C plain organic yogurt
2 T organic raw honey (not for those under 3 years old) OR organic maple syrup

1 C spring water
2 T vanilla
Berries (optional)

Combine flour, shelled hemp seed, baking powder, salt and soda in bowl.
Combine egg whites, yogurt, sweetener and water. Whisk in butter or oil.

Pour into dry ingredients. Use blender to mix to smooth consistency. Optional: add in Berries while cooking!

Cook on (buttered) griddle (medium heat, max 325F), until tops are bubbly – turn and cook until browned.

Serve with more maple syrup OR use the Savory Hemp Hummus or Hemp Butter, below. Can be frozen and heated up in toaster.

SAVORY HEMP HUMMUS – Manitoba Harvest

Makes 4 cups Prep Time: 10 mins

3 C sprouted organic chick peas OR canned organic chickpeas OR beans
1/2 C hemp hearts (shelled hemp seed)

1/4 C hemp seed oil OR mix of hemp and olive OR all organic, extra-virgin olive oil
2 cloves organic garlic
1/4 C organic lemon juice

1/4 C organic parsley
2 T cumin powder
2 T organic red miso

1 t cayenne powder
1 T fresh cracked black pepper

Combine all ingredients in a blender or food processor. Blend on low, stopping to turn the mixture until smooth.

Can be stored in a sealed container in the refrigerator for 4 days.

HEMP BUTTER

Makes 2 1/4 cups. Prep Time: 5 minutes

1 1/4 C organic hemp seed oil
1 lb organic unsalted butter

Soften butter in a container (over night usually does it)

Add 1 1/4 C hemp seed oil and blend in by hand until hemp oil and butter are partially mixed.

Now use a hand blender on low until it’s completely smooth (and green } texture. Refrigerate and remove a small pat when needed.

Usually softens enough to spread at room temp in about 10 minutes. Remember not to cook with it. Keep the temp low and simmer if you must. Compliments of Tom Kowalsky Winnipeg, Manitoba, Canada

COCONUT MANNA™ OATMEAL

1 bowl of hot oatmeal
2 T Coconut Manna™ (organic, extra-virgin coconut oil)
2 T Nutiva shelled hempseed
1 T organic honey or organic maple syrup

Gently mix together. Serve hot or warm.
========================================================================================
VEGGIE HEMP CHILI – Manitoba Harvest

Makes: 6 servings
Prep Time: 10 min. Cook Time: 45 min.

2 t organic, extra-virgin coconut oil
3/4 onion, chopped
1 clove garlic, minced

3 C canned peeled organic tomatoes, chopped, with juice
1 C hemp hearts (shelled hemp seed)
1/3 C spring water

3 T chili powder, more if desired
2 t organic blackstrap molasses
3/4 t cumin

1/8 t cayenne pepper
1/2 t black pepper
1-1/2 C canned organic pinto beans, rinsed and drained

1-1/2 C canned organic black beans
1 jalapeno pepper (optional), diced

Heat oil in a heavy saucepan over medium heat. Saute onion and garlic until softened.

Stir in next 8 ingredients and bring to a boil. Immediately reduce heat to medium low and simmer 15 minutes.

Add beans and simmer another 20-30 minutes, adding water if chili becomes too thick. Stir jalapeno pepper into chili just before serving.

VEGGIE HEMP BURGERS – Manitoba Harvest

Makes: 6 patties
Prep Time: 10 minutes Cook Time: 30 minutes

10 ounces soft tofu
1 C hemp hearts (shelled hemp seeds)
1/4 C sunflower seeds

1/4C scallions, chopped
2 T soy sauce
2 T nutritional yeast

1/2 t dried basil
2 C herb seasoned stuffing — substitute (2C cooked quinoa OR 2C cooked brown rice OR combo)

In a blender, puree tofu then add the rest of the ingredients except stuffing / quinoa and brown rice. Put the mix into a bowl and pour tofu mixture over top. Combine well. Form into burger patties and bake on a greased cookie sheet in a 300 F oven for 25-30 minutes or until golden brown.

“Everyone Knows Someone Who Needs This Information!” (TM)

Alzheimer’s disease (Dementia) is known as Diabetes Type 3, because science has found that our brain produces insulin for its own use, in order to keep brain cells alive. What can we learn from this to help Types 1 and 2, and what common synthetic vitamin food additive kills brain cells?

Dr. Mary Newport, MD is interested in us getting a quota of organic, extra-virgin coconut oil daily, even though it usually gets an undeserved bad-rap as a “saturated” fat (it’s the only vegetarian saturated fat).

Mary is a firm advocate and researcher about using the essential medium-chain fatty acids in coconut oil to build and re-build brain cells.

We’ll find out how that is potentially linked to insulin-resistance and diabetes further down.

As a neonatologist, she studies and is concerned about building fetal, newborn and toddler brains properly, and polyunsaturated fats DON’T(These are oils like safflower, corn, “vegetable”, canola and peanut.)

Brains are 70% fat.  But they must be Omega-3 fats (from cold water fish like salmon, mackerel or herring OR from ground flax seed or from hemp seed) AND the medium-chain fatty acids which coconut oil supplies better than anything else (except mother’s milk).

In my archive, you’ll find many articles about coconuts because I believe them to be a foundational human food, and they are quite alkaline pH.

Dr. Newport also reports and builds on the work of Dr. Suzanne de la Monte.

After being spurred on by Dr. de la Monte’s work, Dr, Newport also got involved in further research on medium-chain fatty acids, as her brilliant husband began to suffer from Type 3 Diabetes (Dementia) (Alzheimer’s).

She helped to turn his condition around.  As long as he stays on her coconut oil protocol, daily, he’s been “stabilized” and has even partially-reversed his dementia.

In Diabetes Type 3, from Dr. de la Monte’s work, Mary learned that our brains make insulin, too, for their brain cells’ own use! Because brain cells need critical, constant fuel, when its cells cannot biochemically get what they need, a whole “other” chemistry kicks in, one based on burning medium-chain fatty acids.

This other kind of biochemistry can also be part of what may help some people to jump-start themselves out of “insulin resistance” (Type 2 diabetes), but you must be under the care of a knowledgeable practitioner.

Dr. Newport’s doses and guidelines for coconut oil use for Type 3 Diabetes are at Dr. Newport’s Research Site. Maybe her protocol can fill in some missing parts of your biochemistry, too.

Dr. Suzanne de la Monte’s research also sheds light on a nefarious culprit destroying your brain cells (and more), everyday. What is this additive? It’s synthetic Vitamin B1  (called Thiamin Mononitrate) (T.M.). You will find it  on vitamin labels, and especially on grain product labels (because it’s added when the natural, nutritious germ is stripped away in refining).

I have known for decades NOT to use nitrated foods.

Always read labels. When kids love hot-dogs or bacon or salami, the only way to help them be safer, is to have them drink a Vitamin C juice (like orange juice) with them, to ameliorate the carcinogenic potential for stomach cancer and other cancers due to the nitrates. Now, all this seems to go MUCH further.

Nitrites and nitrates, found in many processed foods, are nitrosamine compoundsDr. Newport says that “could very well explain the epidemics of Alzheimer’s, autism, diabetes, MS, Parkinson’s and ALS, along with other neurodegenerative diseases that have insulin resistance, decreased glucose uptake as part of the process“.

These diseases have all been on the increase as processed foods have taken over the bulk of our diets (for many people), especially as food budgets decrease as prices increase, and fresh foods become disproportionally expensive (due to the US Federal Government giving farm subsidies to the wrong types of crops).

So, I went looking at the bread labels of what I usually use. I try to use either: 1) sourdough whole wheat bread (as sour-dough process helps to negate the tendency to wheat sensitivity), 2) whole grain spelt bread, or 3) whole grain “organic “multigrain” breads.

Only the organic, most-expensive whole-grain breads had NO “replacement” synthetic vitamins, so were Thiamin Mononitrate free, relying instead on the real vitamins still in the whole-grain germ.

Next, I started looking at cookies, crackers, pretzels, and cereals — usually I don’t have them in the house, but my grandchild (at nearly 2) loves these kinds of easy-to-hold-myself  “foods”. Sure enough, any mainstream brand I looked at in the store had Thiamin Mononitrate. The health-food store brands that I had  at home were fine! (Note: Newman’s Own makes Spelt Pretzels, and my 3 pretzel fiends love them! They’re Thiamin Mononitrate free.)

Using white flour is a no-no, as it has Thiamin Mononitrate and other synthetic vitamins to “replace” all the good nutrition totally lost while milling it to “white”. Some beers, whiskeys etc. ALSO HAVE T.M.

The last thing we want is for any child to succumb, as millions of children are, to autism, in an absolute epidemic with devastating consequences for the future – for families and the nation. And, Dr. Newport thinks the autism epidemic is because so many children’s foods have Thiamin Mononitrate in them — even baby formulas and baby solid foods do! Maybe this also creates Type 1 Diabetes in children. I hope researchers look at this!

Cheap supplement. Expensive consequences!

It doesn’t seem that anyone is looking yet as to whether Thiamin Mononitrate has also been killing insulin-producing cells in our pancreas, just as many scientists accuse cow milk does, to create Type 1 diabetes. How long will it take for research? Who knows!

Meanwhile, if Thiamin Mononitrate does this in much-harder-to-reach insulin producing brain cells, super-protected by the blood-brain barrier, hitting our pancreas is a proverbial ‘piece of cake’. Easy peasy.

From now on, I will encourage everyone feeding my grandchild to read labels and give NO synthetic Vitamin B1 or any other nitrate. Dr. Newport says that Thiamin Mononitrate may also be the reason for so many born-normal children suddenly becoming autistic not long after they start “solid” food (and maybe it is more likely if their formula also contained the synthetic vitamin) (at least my grandchild has been nursed for 2 years).

While natural Vitamin B1 is water-soluble (you will urinate out any excess), the synthetic form,  Thiamin Mononitrate,  is fat-soluble, so it is hoarded and evidently the excess can also cause these troubles, over time!

Make sure that you start to include Organic, extra-virgin coconut oil (OEVCO) in your diet, daily. It needs to be used combined with organic, extra-virgin olive oil (OEVOO), for cooking, as coconut alone does not have a high-cooking temperature before it would “smoke”. NEVER use an oil which has “smoked” as that has produced harmful substances.

Use OEVCO to garnish soups, in smoothies, on sandwiches as spread, in dips and one-time use salad dressings. As I understand what I’ve read, OEVCO does NOT increase arterial blockage, even though it’s a saturated fat (it’s vegetarian). But, you need to factor it into your daily fat calories, which means cutting back on some other fat source (preferably a polyunsaturated one).

Don’t be a epidemic statistic early in life OR late in life. Lack of information creates problems for people’s Health. And, on the Thiamine Mononitrate issue, this is just one more example where poor food processing and “cheap” “replacement” additives are getting by government regulators and therefore compromising our Health for corporate profit!

April 5, 2011, a bipartisan bill was introduced in the US House of Representatives. It’s  called the Free Speech about Science Act (H.R. 1364). This landmark legislation protects the public’s right-to-know by protecting basic free speech rights as they pertain to the current censorship of science.

The Bill enables the natural health community to share peer-reviewed scientific findings with the public – which will help introduce the public to efficacious therapies and natural products for alternative (and mainstream) physicians to use or for self-administration from a position of educated choice.

The Free Speech about Science Bill has the potential to transform medical practice by educating the public about the real science behind natural health, instead of it being demonized by an actually organized, self-serving campaign, especially from an online group (Quackwatch) that serves no-one’s best interest. It’s been exposed that some of those people have links to Big Pharma, in varying degrees.

The Bill will have opposition:

___   from the Federal Drug Administration (FDA) (which has many members increasingly “muffled” or others with deep ties to Big Pharma) – who will oppose it since the Bill restricts their ability to censor the dissemination of published scientific data.

___   from drug companies fearing competition from natural health approaches based on diet, dietary supplements and lifestyle. These pharmaceutical companies show they are motivated by self-interest and with their “deep-pockets”, they have held Congress captive. Just the fact there is a courageous Bill is real progress. Now you have to boost individual law-makers to have the courage to pass it!

___   and possibly from mainstream medical associations, who pipe-their-own-tune as they desire, but constantly want to “muffle” others, including their own members!

The public,  wants and needs access to credible information they can use to make wise dietary and Health choices. Please don’t let any special interest groups stop this bill.

Here’s where to write your Congressional delegate. Do it for yourself, and more importantly, do it for your children and future generations. The world needs people to be proactive about their Health as dis-ease and poor health is spreading because of ignorance. Society needs this information to turn-things-around before poor Health robs us individually and as a nation.

Very few scientific studies utilize women as subjects, but women are at risk for cardiac death because many doctors aren’t monitoring them well-enough, preferring to think it’s mostly a male problem.

Well, I had a savvy, otherwise-healthy friend keel-over and die, when she could afford the best care. So, here again, take this study into your doctor and let him watch over you without thinking you’re being a hypochondriac.

The Life Extension Foundation Magazine reports:

“Greater dietary intake of magnesium and higher plasma magnesium levels are associated with a reduced risk of sudden cardiac death in women, according to a study published in the American Journal of Clinical Nutrition.  It’s long [been] known for its anti-arrhythmic properties in cellular and experimental models … .

Scientists examined dietary intake data collected from more than 88,000 women enrolled in the Nurses’ Health Study. During 26 years of follow-up, 505 cases of sudden cardiac death occurred. In a case-control analysis, the scientists compared plasma magnesium levels between 99 sudden cardiac death cases and 291 control patients. Higher dietary intake of magnesium and higher plasma magnesium levels were associated with lower risks of sudden cardiac death.

These findings suggest that increasing magnesium intake and plasma levels may protect women against sudden cardiac death by preventing abnormal heart rhythms.”  Dr. E. Wagner, MD reported.

Everyone Knows Someone Who Needs This Information” (TM)

Well, another week has gone by with continued uncertainty about how large a nuclear event will happen in Japan, how much area of Japan and the world will be contaminated, as well as to what degree. This whole scene should be making all of us think hard!

The best solution to the energy-crisis (and looming rising oil costs) is conservation! It can do more than anything else to help the planet and our fiscal stability – personally and nationally.

All of us need money for more important things in life — like supporting our Health. We have to make serious choices here.

An Japanese-American nuclear physicist, just returning from Japan, was interviewed locally last night. He said that what happened imminently was going to determine the extent of the disaster, now that they have determined nuclear reactor 3 has been “breached” and serious radiation was beginning to escape.

He continued, that if, because of radiation hazard for the firemen and reactor workers, they have to stop dousing the other two at-risk reactors, and thereby they melted-down too, this would be a “much bigger catastrophe than Ukraine’s Chernobyl” (which has a dead-zone around it which will last for at least a couple of centuries).

The location of these 3 plants and the wider circle of contamination  will effectively impact Japan and Honshu Island to a huge degree, really pushing already strained population centers to the max. It would mean  removing a huge contaminated area, which threatens to bi-sect the island and make each half disconnected.

Already the economic impact is tremendous, with parts and supplies needed for already-exported goods not being able to be manufactured. The crisis will mean jobs lost or furloughed all over the world.

That’s bad enough, but now back to Health. Unfortunately, as I suspected, the longer the radiation was spewing, the more likely that even the ocean would be effected. I don’t know how far and how deep the samples were taken but news this week said “seawater” was showing radiation, as was land water, milk, spinach, potatoes, and some root crops (!), like turnips.  All still at “non-problematical levels”, but if the situation goes awry, as described above, all bets are off.

It’s a shame, as Japan’s industrial rise was based on a land which had NO ready-to-go natural energy resources of its own. I wish that over these last few decades, they would have immediately researched wind (which the Americans did and then turned the technology and industry over to the Japanese to manufacture), geo-thermal and wave-action technologies (their best source, but least-researched) and solar (which is less useful to them, as they are a far-north country), but all would help.

The Japanese government went against their people’s traditional Shinto respect for Nature in choosing nuclear power and it has come back to bite them with a vengeance.

The shame is shared by America. It turns out that General Electric (GE) manufactured this “cheap” version of a nuclear reactor. The global corporations are wreking their havoc again. I do not know to whom else they sold this crappy reactor, which is doing just what critics were concerned it would do. But, in reports online,  I did read that there are at least 23 of the same GE nuclear reactors in nuclear power stations in the United States! Some are even on earthquake faults here.

So, everyone, you may have one of these monsters on your doorstep. I suggest you find out, and while you’re at it, start campaigning to get it decommissioned, like we did (decades ago) to the one plant that our power company (built against our wishes), on the Columbia River, in Oregon. We know we are as safe and responsible as we can be, now. Can you say the same? Yes, it took a long public campaign and a short time to vote and then goosing the utility and the government to do what The People wanted. All the more reason for you to start now.

Oregon then followed through on energy conservation and research. We have wind-farms, wave-technology starting on the Oregon coast, bike lanes and public-use bikes in major cities, new, efficient forms of public transportation reaching as deeply as possible into suburban neighborhoods etc. Support for sharing cars. We have revised codes and building standards. We are intent on Green.

This allows all of us in Oregon to have the 2nd forward-most thinking and action on Healthcare.

Until last Thursday, I would have said First. But, to their credit, the Legislature in Vermont wrote and passed historic legislation to get private, for-profit health “insurance” companies and “health-plans” out of Vermont!

In the next couple of years, a plan being crafted now, will bring to Vermonters the nation’s first universal health-coverage! Bravo! Brava! It will be a single-payer system. And it will be drafted in co-ordination with physicians, so the emphasis will be Health and not admin or drug company lobbying.

Vermont is another Green-thinking state, not wildly spending our grand-children’s future.

Oregon and Vermont have a lot to teach the rest of the nation and you need to make your so-called “representatives” take a serious look. Instead of supporting the new campaign for nuclear power to rise again in  America, quash it! Stop it now and forever. Otherwise, people will be dealing with lots more than diabetes, as fallout, sooner or later.

Health and social services, as well as public-safety,  have to be the first concerns of any government, and we cannot have this when we are mired in poor decisions and falsely-helpful technology raping us in other areas of life.

Aussies and others have had successful experiments with cars run on water cells etc., there’s SO much alternative energy research to do to help the planet and ourselves. We need to support that research and not let researchers be harassed (and worse) by goons from big-Oil.

Now, as promised last week, I’ll share why Dr. Robert Jay Rowen, MD cautions about the media’s use of potassium iodide as an effective help for this potential crisis of radiation poisoning, for the following reasons.

There’s been a massive run on potassium iodide, and regular store shelf supplies in some West Coast cities is sold-out. “Experts” are telling people that this combination will protect them from nuclear fallout, but Dr. Rowen says “They’re wrong!”.

He says that potassium iodide is a good product, but that the potassium is supposed to protect you from the radioactive cesium molecules. And the iodide protects against radioactive iodine isotopes.

But, here’s the problem:
___   First, in his opinion, there’s not nearly enough potassium in this combination to protect you against the radioactive cesium. (In your body, cesium acts like potassium. So the theory is that if you have enough potassium in your body, that is supposed to prevent your body from absorbing the cesium.)

But Dr. Rowen believes that most people are so deficient in potassium, that the small amount in potassium iodide won’t protect you. Instead, he says that you need to take a separate potassium supplement to protect yourself.

___   Second, Dr. Rowen says that you have to protect a lot more than your thyroid from radiation. The iodide in potassium iodide will protect your thyroid, but it won’t be as efficient at protecting your breasts and other organs.

Iodide and iodine — each serves slightly different roles in your body, and they each protect different organs, in different ways.

Yes,  iodide is only one form of iodine. In the event of nuclear fallout, it’s vital you protect your body with both nutrients, and potassium iodide doesn’t provide iodine.

Iodine is essential for your thyroid, and this gland needs it most — this is especially true for children’s thyroid glands, as they are growing and have faster metabolisms, so radioactive iodine will damage their gland much more. 

If you’re deficient in Iodine, as most Americans are, your thyroid will pick up any iodine your body ingests (we’ve talked about this danger before). This includes grabbing radioactive iodine isotopes, which can then poison your thyroid.

But, Dr. Rowen says, if your thyroid is sufficiently full of iodine, your gland will ignore any other iodine passing by — including radioactive iodine.

There are two products that provide ample amounts of both iodide and iodine, in addition to food sources.

___ Dr. Guy Abraham, MD’s landmark product, Iodoral, is the first. Dr. Rowan says ” I think most people should take one capsule daily, just for general nutritional purposes. I do. After a few weeks, your thyroid should be sufficient in iodine and iodide, making your organs more resistant to radioactive iodine.” Iodoral is a pill and tasteless, whereas that cannot be said for the next choice.

___  A good (but foul-tasting)  alternative is Lugol’s solution. This should be available from your pharmacist. Explain what you need it for so you get the correct version.  This is a centuries-old formula, from a Frensh pharmacist, for this lack-of-iodine problem, which used to be rampant in Europe plagued with goiter.

In a way, it is the liquid form of Iodoral. Two drops of this Lugol’s Solution – an iodine/iodide product —  is equivalent to one Iodoral tablet. Dr. Rowen says: “If you know there’s a significant risk of radioactive iodine exposure, you can double or triple the Lugol dose in the short run.”

___   Finally, Dr. Rowen also mentions that potassium iodide cannot protect you against the radioactive heavy metals — like uranium and plutonium! This is the greatest hazard!

Uranium atoms seem to be too large for conventional chelators to grab, so he recommends Metal Magnet.

It is a totally natural supplement from decayed organic matter, which contains active humic and fulvic acids. These are complex large organic molecules which are structured with lots of carboxylic acid chemical groups (which attract metals like a magnet). All size  metal molecules will fit in, even the big-boys like uranium. Find Metal Magnet on the Internet.

___   Strontium 90, which a also radioactive mineral, and has been found in American dairy in the past; it is a more difficult issue, as it is chemically similar to calcium,  so it can enter and stay in your bones — potentially causing bone cancer.

The  EDTA protocol can chelate calcium, so it should also grab strontium, and studies suggest it does. Dr. Rowen says: “For strontium 90, consider both oral and rectal EDTA, which may offer limited protection. If you are exposed to radiation, I’d go directly to intravenous EDTA under the care of a trained chelation doctor.”

___   And, as general, everyday protection:

He also recommend taking Chlorella (15 tablets daily!). This algae  is an excellent metal detoxifier and it is definitely a superfood; get it in juice form, too, in smaller quantities tho’,  in many of the “green” juices. Read the labels.

When the Ukrainian nuclear plant at Chernobyl melted down, Russian researchers found brown seaweed (alginate) greatly reduced radiation poisoning. Dr. Rowan suggests  Modifilan and  Pectasol Chelation Complex (same as Dr. Fuchs) as both products are rich in alginates. OR, as I have said many times — start using kelp in your diet. Advanced Detox Formula has a long track-record helping cancer patients undergoing radiation therapy. The formulation greatly reduces the amount of radiation their body absorbs, so it will work for environmental exposure, too.

I don’t know about you, but I have trouble after 500 mg of Vitamin C. I’d be in the bathroom all the time, but maybe if exposed to massive radiation, one can tolerate that much Vitamin C as your body would be using it up at a furious rate! So, I hope all this helps our Japanese friends, and any who are exposed in future nuclear events.

___   Dr. Rowen, MD is a kindred spirit, as he, too, brings us back around to letting Food Be Your Medicine and savior. Remember, that everyday use of  certain foods can protect you — especially if you are eating as many raw, Living Plant Foods (LPF) as possible.

Plants have to survive constant assault from solar radiation. So, their plant chemicals  can help protect you as well. The Japanese use many of these products just naturally, and especially after the atomic bombs were dropped on them during WW2.

Generally, the Japanese diet is the healthiest in the world; their people are the most long-lived and if anyone can survive this catastrophe, the Japanese can, given half-a-chance as they already have all these good habits in place.

Their research has shown that for general radiation exposure, whether nuclear, or even medical gamma ray exposure, that Japanese fermented soybean paste ( miso) can protect you.Many studies confirm the efficacy of fermented soy, but it is salty, so a tablespoon is a lot to use at one time. Miso soup is a good choice. The recipe from Jim Healthy I published last time is at a level you can use through the day.

As an aside, Dr. Rowen tells  of a hospital right under ground zero in Japan, which survived the bombing. It was spared the destruction of the blast (which went outward more than downward). One of the doctors walked outside after the bomb dropped, saw the total destruction, walked back inside and told everyone to start eating miso. Those who did were spared radiation sickness, even at ground zero!

Organic soy bean miso is easy to find in the refrigerator case of good health stores. Read the labels, as some miso is also made from barley, and I do NOT know if it would have the same protective properties.

Tofu is NOT fermented. It does NOT count, and I would think the same is true of the whole soybean (edamame), as it is the fermentation process which releases other compounds in the soybean. Eat edamame for other healthy purposes. And, do NOT cook miso! Just add it at the end of the cooking process; just swirl it into the dish.

Start to eat seaweeds, sprouts, miso and radishes, onions and garlic everyday.

As a start: try Tofu – Seaweed Burgers Note: this makes 10-12 burgers. Experiment to see if they freeze well OR just reduce the recipe. Hijiki is a robust seaweed with lots of texture. You can also substitute nori seaweed without soaking or use several tablespoons of kelp sprinkles. Each of the potatoes (use the skin, too), seaweed and miso are very pH alkaline foods, That’s GOOD.

OK, we’re done, but find out if there’s a nuclear power plant near you and start to get it decommissioned like we did in Oregon; start to learn more about energy conservation; start to be proactive for getting the federal government to set aside research money to be spent on alternative energy; let your representatives know that you do NOT support expansion of the nuclear industry.
